This unique, amber-colored sake is brewed according to a centuries-old recipe from the Konishi family, the oldest brewing family in Japan since 1550.
This sake is a flavor bomb full of ' umami ' (hearty depth of taste and aroma), with pronounced notes of soy, caramel, figs, brown sugar, nuts and dried fruit.
The Japanese name on the front label, 'Edo Genroku no sake' , refers to the prosperous and peaceful years during the Edo Genroku period (1688-1704). This sake is a reconstruction of the popular sake style of that time, according to a recipe from 1703 from the secret recipe book of the Konishi family, the so-called ' sake eitai oboechou ' or ' sake eternity notebook' .
The exceptionally high degree of polishing (88%) means that only 12% of the rice grain is polished away. This ensures exceptional retention of starch, minerals and amino acids. The volume of brewing water for this sake is only about half of what is currently used during the brewing process, resulting in a slightly higher alcohol volume (17.5%) and a natural coloration to deep amber tones during the aging process of at least 36 months.
Serve this vintage sake neat in a sherry-style wine glass or 'on the rocks' in a sturdy tumbler-style whiskey glass.
The glass bottle (capacity 720ml) is supplied in a cardboard gift box as standard.
Food pairing tips: mature cheeses, blue cheese, foie gras, game pâté, lacquered duck, eel or pork belly, rich soy-based sauces, risotto with autumn vegetables, chocolate desserts, vanilla ice cream, gingerbread, gingerbread, 'on the rocks' digestif.
