The rice used in this sake is grown in rice fields in Shiga Prefecture where fertility has been dramatically improved by SOFIX technology, which uses organic matter from racehorses (horse manure) to enrich the soil.

This sake is characterized by a silky aroma and pure taste. The nose is a wide collection of aromas, with cherries, plums, grapes, watermelon, pineapple, minerals and straw. Pure, light and soft flavors with hints of nectarine and yellow apple, gently sliding to a slightly dry finish.
